As you know my new plan is to bake myself out of my depression. I started on Thurs with ‘White chocolate cupcakes with marshmallow frosting’. It was actually very therapeutic. I melted and mixed, whisked and drizzled and thoroughly enjoyed decorating them all with purple edible glitter. So here is the recipe for :

White Chocolate Cupcakes with Marshmallow Frosting. (adapted from a women’s weekly cupcake recipe)

Ingredients:
250g butter chopped
150g white eating chocolate chopped
440g caster sugar
250ml milk
225g plain flour
75g self raising flour
1 tsp vanilla extract
2 eggs beaten lightly

Marshmallow frosting
220g castor sugar
80ml water
2 egg whites

To make white chocolate cupcakes.

1 preheat oven to 160/140 fan oven
Line two 12 hole muffin trays with paper cases.

2 Combine butter, chocolate, sugar and milk in a saucepan. Stir until smooth without boiling. Transfer mixture to a mixing bowl and leave to cool for 15 mins

3. Whisk sifted flours, then extract and egg into chocolate mixture. Divide white chocolate cupcake mixture among cases, bake for around 20 mins. Put cakes on a wire rack to cool.

Marshmallow Frosting.

1. Combine sugar and water in a small saucepan. Stir over a low heat until the sugar dissolves then bring to the boil.

2. Boil uncovered, without stirring, for about three mins or until the syrup is slightly thick.

3.Just before syrup reaches dis sired consistency beat egg whites with an electric whisk until firm.

4. When syrup is ready allow bubbles to subside then pour into egg whites (while whisking) in a thin stream.

5.Continue whisking for five mins or until thick. Marshmallow frosting is ready.

6 Frost and decorate your cakes.
