I love mango, if you catch it perfectly ripe it has an amazing taste. It is however a fine line between ripe and too ripe. Unfortunately today my mango had gone into the too ripe stage so I had to come up with a use for it and quickly. I decided to try a tea loaf with a twist and it is delicious.
125g plain flour
1 teaspoon of mixed spice
1 teaspoon of bicarb of soda
pinch of salt
100g agave nectar
30 ml vegetable oil
1 egg
200g mango chopped
4 tablespoons of raisons or sultanas.
Preparation
– Turn to oven on to 180 celsius / gas mark 4.
– Combine all the dry ingredients.
– Beat the egg with the oil and agave nectar and add to dry ingredients.
-Add mangos and raisons.
– Pour into a greased 450g loaf tin and bake for 30 mins or until a skewer comes out clean.
– Enjoy.
this looks really nice Ella. mmmm i love tea cake. i made an apple and mango one once which was nice but batter was a little too wet so was a bit heavy when cooked yet still tasty.
