Last week I tried tea loaf for the first time. I was impressed, and inspired to have a go at making my own. I found a recipe on the Nigella forums (which btw is a great place to go for recipes) but it wasn’t exactly what I wanted. So I decided to use the basic idea but use wholemeal four to make it a little healthier. I also added jam because tea, toast and jam is a favourite of mine. It turned out brilliantly, its delicious, filling and really reasonably priced to make. If you fancy having a go, here is the recipe;
Ingredients;
- 1 cup of cold black tea
- 8oz raisons
- 8oz self raising wholemeal flour
- 4oz caster sugar
- 1 large beaten egg
- 2 tablespoons jam
Method;
- Preheat the oven to 180 degrees/gas mark 4
- Grease a 1.5ib loaf tin
- Soak the raisons in the tea for at least 4 hours
- Mix together the flour, sugar, egg and jam
- Add the raisons, and any tea that is left with them, mix well
- Put the mixture in the loaf tin and cook for an hour, you may need to put tin foil over the top if it starts to brown too quickly
- Enjoy with oodles of butter and a good cup of tea
This looks lovely – no butter in the cake??! Oh wait a minute you smother it on afterwards!! Phew 😉 Seriously though, this does sound delicious 🙂
